Well first thing’s first. You won’t be able to dry figs unless you’re reading this in August. That’s when figs are dried in Italy.
Oh and one more very important thing. If you want proper Italian-style dried figs you’re going to need a wood-fired over. Yep, that’s how it’s done. Italians take their fig-drying pretty seriously and using traditional drying methods is exactly how it’s done.
3 Steps to Drying Figs
- Step 1. Pick figs from tree. Do not wash – that’s right, do not wash.
- Step 2. Dry figs on a rack in the strong August sun for 3 full days.
- Step 3. Place figs in a preheated wood-fired oven (like pizza oven), when fire is out and oven is *hot, leave figs to dry for another 12 – 24 hours until they are golden brown.
- Step 4. Eat at Christmas time!
*Key is not to have oven too hot or too cold. But just right! That’s the skill to wood-fired ovens – ask you local farmer & baker for more info!
